The perfect finger food that can be paired with your favorite condiment/sauce. They come out tender and moist!
1.5 lb skinless boneless chicken breast, diced
2 large eggs
1/3 cup coconut flour (if you're not following a specific diet, use all purpose flour)
1/4 cup dairy free mozzarella, shredded (if you're not following a specific diet, use regular)
1 spring onion, thinly chopped
In a large bowl, add chicken, eggs, coconut flour, mozzarella, and the spring onion. Season with parsley, garlic powder, salt, and black pepper. Mix all ingredients in a bowl together well.
Preheat air fryer to 350 degrees
Use a large spoon to scoop the mixture out of the bowl and shape into patties/fritters
Brush each side with olive oil or spray
Add to air fryer rack and cook each side for 5 minutes. Then serve with your favorite condiment/sauce!
