Soy Ginger Salmon

An easy to make salmon dish that's baked in a soy ginger sauce.

Servings: 2


Ingredients:

  • 1 lb salmon, cut in 4 fillets

  • 1/4 cup low sodium soy sauce

  • 2 tbsp rice vinegar

  • 2 garlic cloves

  • 2 tbsp ginger, grated (use more or less based on how much of a gingery taste you like)

  • 1 1/2 tbsp of honey

  • Olive oil

Directions:

  1. Let salmon sit out until it reaches room temperature

  2. Preheat oven to 425 degrees F

  3. Heat a cast iron skillet to high on the stove top for 10 minutes

  4. In a small sauce pan, add low sodium soy sauce, rice vinegar, garlic, ginger, and honey, and simmer on a medium high heat

  5. Drizzle olive oil on the salmon and use a brush, so that it's evenly coated. Place the salmon skin side face up in the skillet and cook for 3 minutes. Then flip the salmon over and add the glaze from the saucepan using a spoon

  6. Move the skillet to the oven. Cook for 5 minutes. Then remove from the oven, cover with aluminum foil for 5 minutes, then serve
