Almond Crusted Pork Chops

Thinly sliced pieces of pork that's almond crusted with zucchini noodles.

INGREDIENTS:

  • 4 boneless thin-sliced pork chops

  • 1 large egg

  • 1 cup almond flour

  • 2 tbsp alt

  • 2 tbsp black pepper

  • 3 tbsp ghee

  • 4 medium sized zucchini, spiralized

  • 10 oz shiitake mushrooms

  • 4 tbsp capers

Total Time:

30 min.

DIRECTIONS:

  1. Preheat oven to 225 degrees

  2. Combine flour, salt, and pepper in a dish

  3. Dip pork into the egg, coating both sides.  Let the extra egg drip off and then coat both sides in the flour mixture

  4. Melt 2 tbsp of ghee in a large skillet over medium high heat.  Add the pork and cook each side for 4 minutes or until it browns.  Transfer the pork to an oven safe dish and place it in the oven to keep it warm

  5. Melt the last tbsp of ghee in the skillet.  Add the zucchini noodles and shiitake mushrooms and cook until crisp tender.  Then add capers and mix it all around for a minute

  6. Place the zucchini noodles, mushrooms, and capers on a plate, top with the pork chops and serve
