Bacon, Chicken, Egg Muffins

INGREDIENTS:

  • 1/2 lb ground chicken

  • 2 cups baby spinach

  • 32 oz liquid egg whites

  • 8 oz bacon, Whole30 compliant, chopped

  • 1 small sweet onion, chopped

  • Olive oil cooking spray

DIRECTIONS:

  1. Preheat oven to 375 degrees

  2. Add the chicken to a skillet on medium high heat for about 7 minutes or until cooked and set it aside in a dish when finished

  3. Add the bacon to the same skillet and cook until it turns crisp

  4. Pour the container of egg whites into a large mixing bowl.  Add the spinach, chicken, bacon, and onion.  Then stir the mixture around

  5. Spray a jumbo muffin tin with olive oil and add the mixture to it.  Cook in the oven for 20 minutes.  Individually pack in a freezer bag.  Reheat when ready to serve
