Cashew Chicken & Broccoli
One of my favorite weeknight meals to make that's packed with protein!

INGREDIENTS:
1/2 cup soy sauce
1 tbsp hoisin sauce
1 tbsp rice vinegar
2 tbsp honey
2 tbsp sesame oil
1 tbsp ginger, minced
2 cloves garlic, minced
1 lb chicken breast (cut in 1-inch pieces)
Salt and pepper
1 tbsp cornstarch
4 cups broccoli floret
1 cup raw cashew (unsalted)

DIRECTIONS:
In a medium bowl, combine the soy sauce, hoisin sauce, rice vinegar, honey, sesame oil (only 1 tbsp), ginger, and garlic
In a separate medium bowl, sprinkle the chicken with salt, pepper, and cornstarch
Heat a skillet over medium-high heat and add 1 tbsp sesame oil
Add the chicken and cook for 5-7 minutes, or until the chicken browns
Remove chicken and set aside in a separate bowl
Add the broccoli to skillet and cook for 2-3 minutes
Add the chicken, cashews and sauce to the skillet and stir ingredients together
After the sauce thickens, remove from heat and serve over rice
