Cashew Chicken & Broccoli

One of my favorite weeknight meals to make that's packed with protein!

  • 1/2 cup soy sauce

  • 1 tbsp hoisin sauce

  • 1 tbsp rice vinegar

  • 2 tbsp honey

  • 2 tbsp sesame oil

  • 1 tbsp ginger, minced

  • 2 cloves garlic, minced

  • 1 lb chicken breast (cut in 1-inch pieces)

  • Salt and pepper

  • 1 tbsp cornstarch

  • 4 cups broccoli floret

  • 1 cup raw cashew (unsalted)

  1. In a medium bowl, combine the soy sauce, hoisin sauce, rice vinegar, honey, sesame oil (only 1 tbsp), ginger, and garlic

  2. In a separate medium bowl, sprinkle the chicken with salt, pepper, and cornstarch

  3. Heat a skillet over medium-high heat and add 1 tbsp sesame oil

  4. Add the chicken and cook for 5-7 minutes, or until the chicken browns

  5. Remove chicken and set aside in a separate bowl

  6. Add the broccoli to skillet and cook for 2-3 minutes

  7. Add the chicken, cashews and sauce to the skillet and stir ingredients together

  8. After the sauce thickens, remove from heat and serve over rice
