Cashew Crusted Chicken
Chicken that's deliciously coated with a crisp cashew crust.

INGREDIENTS:
Olive oil cooking spray
1 large egg
1/3 cup raw cashews, finely chopped
1/2 cup almond flour
Salt
Pepper
12 oz chicken tenderloins, boneless & skinless

DIRECTIONS:
Preheat oven to 425 degrees
Rinse the chicken tenderloins and pat thoroughly dry with a paper towel
Whisk the egg in a bowl. In a separate bowl, mix the flour and cashews
Season the chicken with salt and pepper. Then dip the chicken into the egg and let the excess drip off. Then dip it into the cashew mixture, coat both sides and set aside on a pan
Spray both sides of the chicken with the olive oil cooking spray. Make sure to not use too much, otherwise, the coating for the chicken will be soggy
Bake in the oven for 15 minutes and flip halfway through
Note: If you're using an air fryer, set the baking temperature to 400 degrees and bake for 12 minutes
