Chicken Fritters

The perfect finger food that can be paired with your favorite condiment/sauce. They come out tender and moist!

INGREDIENTS:

  • 1.5 lb skinless boneless chicken breast, diced

  • 2 large eggs

  • 1/3 cup coconut flour (if you're not following a specific diet, use all purpose flour)

  • 1/4 cup dairy free mozzarella, shredded (if you're not following a specific diet, use regular)

  • 1 spring onion, thinly chopped

  • Parsley

  • Garlic powder

  • Salt

  • Black pepper

  • Olive oil

DIRECTIONS:

  1. In a large bowl, add chicken, eggs, coconut flour, mozzarella, and the spring onion.  Season with parsley, garlic powder, salt, and black pepper.  Mix all ingredients in a bowl together well.

  2. Preheat air fryer to 350 degrees

  3. Use a large spoon to scoop the mixture out of the bowl and shape into patties/fritters

  4. Brush each side with olive oil or spray

  5. Add to air fryer rack and cook each side for 5 minutes.  Then serve with your favorite condiment/sauce!
