Chickpea & Brussels Sprout Salad

A light and refreshing salad mixed in a lemon tahini dressing.

INGREDIENTS:

  • 1 can chickpeas (9 oz)

  • 2 cups brussels sprouts

  • Salt

  • Black pepper

  • 3 lemons

  • 1/2 cup tahini

  • 2 tbsp olive oil

DIRECTIONS:

  1. Rinse and drain chickpeas

  2. Shred brussels sprouts in blender or food processor

  3. In a bowl, add tahini, olive oil, squeezed lemon, sprinkle salt & peppper, and slowly start pouring 1/4 cup of water while whisking the mixture, until you reach your desired thickness.  If it is still too thick for you, continue to slowly add more water

  4. Toss the chickpeas and brussels sprouts with tahini dressing and serve
