Mexican Beef Sweet Potato Sliders

Mexican flavored beef sliders on sweet potato slices. Great for a small bite or appetizer to bring over to someone's house!

  • 1 lb ground beef

  • 2 large sweet potatoes (enough to make 12 slices)

  • Hot chili powder

  • Garlic powder

  • Cumin

  • Salt

  • 2 medium avocados

  • 1/2 red onion, minced

  • 2 garlic cloves, minced

  • 1 lime

  • 1/4 cup cilantro

  • Chipotle lime sauce that's Whole30 compliant (or use regular if not following a diet)

  1. Preheat oven to 425 degrees

  2. In a bowl, make guacamole by adding the avocados, onions, garlic cloves, juice from the lime, and cilantro.  Sprinkle it with some salt.  Mash it all together with a fork until it's combined well.  Cover and set aside in the refrigerator

  3. Cut the sweet potatoes into 12 slices.  Spread evenly on a baking sheet and spray both sides of the sweet potato slices with olive oil.  Cook in the oven for 12 minutes on one side, then flip the sweet potatoes over and cook for another 12 minutes until they're soft

  4. While the sweet potatoes are cooking, season the ground beef with hot chili powder, cumin, salt, and garlic powder.  Then shape the ground beef into 12 patties

  5. Heat a skillet on medium high for 3 minutes, then add the patties and cook each side for 3 minutes and then move to a plate

  6. Assemble the sliders by adding the patty onto the sweet potato slice, spread Chipotle Lime sauce on the patty, and top with the guacamole
