Pork Patties w/Mashed Sweet Potatoes & Caramelized Onions

Great simple dinner meal to have during the week for pork lovers to enjoy.

  1. Preheat oven to 350 degrees

  2. In a large mixing bowl, mix the ground pork, sage, thyme, cayenne pepper, nutmeg, and lemon zest.  Season with garlic powder, onion powder, salt, and black pepper.  Shape the mixture into 8 small patties.  Set it aside on a plate and put it in the freezer for 10 - 15 minutes

  3. Pour 4 cups of water into a pot and bring it to a boil over a medium high heat.  Then add the sweet potatoes and let it boil for 10 - 15 minutes until they soften.  Drain the pot and add the coconut milk and 1 tbsp of ghee to the pot.  Season with salt and pepper.  Then mash it with a fork and mix it all together

  4. Take the patties out of the freezer and place on a parchment paper lined baking sheet and bake it in the oven for 12 - 15 minutes

  5. Heat a skillet over medium high and melt the remaining 3 tbsp of ghee.  After 3 minutes of letting it heat, add the onion and cook for 15 minutes.  Make sure to turn them in the skillet as they begin to brown and caramelize

  6. Then transfer the mashed sweet potatoes to a place, top with the caramelized onions and serve with the pork patties

  • 1 lb ground pork

  • 1/4 tsp cayenne pepper (use more or less based on your desire for the level of heat)

  • 1/8 tsp nutmeg

  • Salt

  • Black pepper

  • Grated zest of 1 lemon

  • 2 large sweet potatoes, peeled and cut into large pieces

  • 4 tbsp ghee

  • 1 small onion, thinly sliced

  • 1/2 cup full fat coconut milk
