Sausage, Broccoli, & Plantain Skillet Meal

A tasty one pot meal with little prep work required.

INGREDIENTS:

  • 1/2 cup Whole30 compliant chicken broth

  • 3 cups broccoli florets

  • 2 tbsp coconut oil

  • 12 oz package of Whole30 complient chicken & apple sausages, 1/2" slices

  • 1 large plantain, 1/2" slices

  • Oregano

  • Salt

  • Black pepper

  • Thyme

  • Rosemary

  • Basil

  • Sage

DIRECTIONS:

  1. Pour the chicken broth into a cast iron skillet over medium-high heat.  When the broth begins to steam, add the broccoli and cover for about 2 minutes or until it turns bright green.  Then set the broccoli aside on a plate

  2. If there's any residual chicken broth in the skillet, empty it out.  Add 1 tbsp of coconut oil to the skillet and change the heat to medium.  Add the sausage and cook for 5 minutes or until it browns.  Then transfer it to the same plate with the broccoli

  3. Add the remaining coconut oil to the skillet and add the plantain.  Cook for 4 minutes or until it starts to become golden on both sides

  4. Add the broccoli and sausage back into the skillet and season with salt, pepper, thyme, rosemary, oregano, basil and sage.  Then serve
