Sauteed Kale w/Bacon

Quick side dish that's crisp and a little sweet from the red onions and so delicious from being cooked in the bacon fat.

INGREDIENTS:

  • 4 slices Whole30 compliant bacon, chopped (or regular if you're not following a diet)

  • 4 cups kale, chopped

  • 1 small red onion, sliced

  • 1/2 cup shredded carrots

  • 1/2 cup grape tomatoes, halved

  • 1/4 cup raw cashews

DIRECTIONS:

  1. In a large skillet, cook the bacon on medium high, until it begins to brown and crisp.  Then set the bacon aside to a plate lined with a paper towel

  2. Leave the bacon fat in the skillet and add the kale and onions.  Mix together a few times in the skillet for about 3 minutes or until the kale begins to wilt and then serve
